Ingredients:
Your favorite sausages (Italian, bratwurst, or spicy links)
Olive oil or a light vegetable oil (optional for brushing)
Buns and condiments of your choice (mustard, ketchup, grilled onions, etc.)
Instructions:
1- Preheat the Grill: Prepare your charcoal grill by lighting the charcoal. Let it burn until the coals turn gray and ashy, creating an even, medium heat. This usually takes about 20 minutes.

2- Prepare the Sausages: While the grill is heating, lightly brush the sausages with a bit of oil to prevent sticking. You can also pierce them once or twice with a fork to release some of the fat while grilling (optional).

3- Grill the Sausages: Place the sausages on the grill over indirect heat to prevent burning. Indirect heat helps cook the sausages thoroughly without charring the outside too quickly. Close the lid and let them cook for 12-15 minutes, turning occasionally.

4- Finish over Direct Heat: After they are nearly cooked, move the sausages over direct heat for 2-3 minutes on each side to get a nice, crispy char and those classic grill marks.

5- Check for Doneness: Ensure the internal temperature of the sausages reaches at least 160°F (71°C) for safety. You can use a meat thermometer to check this.

6- Rest and Serve: Let the sausages rest for a few minutes before serving. This helps retain the juices.

7- Serve: Place the sausages in buns, and top with your favorite condiments like mustard, ketchup, or relish. You can also add grilled onions, peppers, or sauerkraut for extra flavor.

Tips:
If you’re using thicker sausages, they may take longer to cook.
For extra flavor, you can soak the sausages in beer for 30 minutes before grilling, which enhances their taste and adds moisture.
